Rolled Vanilla Honey Cookies


Susie's Rolled Cookie recipe, an old time favorite with a healthy flare! The very best cookies have the very best ingredients!

2 cups organic
 flour (1 cup stone ground organic whole wheat pastry flour and1 cup organic unbleached white flour)
1½ teaspoon Rumford baking powder
¼ teaspoon salt
6 Tablespoons butter
1/3 cup coconut oil (organic)
3/4 cup raw honey
1 egg
1 Tablespoon milk
1 teaspoon vanilla


Stir together flour, baking powder, and salt. Beat butter and coconut oil for 30 seconds; add honey and beat till smooth and somewhat fluffy. Add egg, milk, and vanilla; beat well. Add dry ingredients to beaten mixture, beating till well combined. Cover and chill at least 3 hours. 

Preheat oven 375 degrees. Working with the chilled dough - about ½ the dough at a time (keep the other half refrigerated/chilled) on a lightly floured surface, roll to 1/8" thickness. Cut into desired shapes. Place on an ungreased (or parchment paper lined) cookie sheet. Bake in a 375 degree oven, on top rack, for 8 minutes or till done.




Place cookies on cooling rack or wax paper to cool. These wonderful cookies do not need frosting...especially to help maintain strong immunities for your children, the sugary frosting can be avoided. 

Makes 36 delicious cookies!


 

For those special occasions where you just have to have some decoration...use just a little frosting by utilizing a decorating bag. The decorating bag allows you to apply a controlled thin line to make a smiley face or outline a figure. These wonderful cookies shouldn't be smothered in sugary frosting, it just isn't necessary.

For just a touch of
 
decoration try this

Vanilla Butter Frosting


6 Tablespoons butter (softened)
4 ½ - 4 ¾ cup powdered (confectioners) sugar
¼ cup whole milk
1½ teaspoons vanilla

With electric mixer beat butter till light and fluffy. Gradually add half of the powdered sugar, beating well. Beat in the vanilla. Add remaining powdered sugar, beating well; you may not need to add the milk, so add just little of the milk and only then if the frosting is too dry. You will want the frosting very thick, but not dry.

Scoop frosting into a decorating bag and using a fine-tip to make happy faces on (completely cooled) cookies, a few decor dots, or outline shapes. Allow the decorated/frosting on the cookie to dry before storing or stacking. 

This frosting recipe will decorate 60-80 cookies when using it lightly to outline shapes, add little dots, and make little happy faces. Remainder stores well in refrigerator, covered container.
